Coconut Rice

Ingredients:
Coconut - fresh grated (frozen) 1 cup
Rice 1 cup
Curry leaves few
Dry Red Chillies 3-4
Urad dal 1 tsp
raw peanuts 1-2 tbsp
Mustard seeds 1/2 tsp
Oil 1 1/2 tbsp
Salt to taste
Method:
Cook rice separately (this recipe is what I use to get done with yesterday's rice)
Heat oil in a pan and add mustard seeds.
Once they start spluttering, add urad dal, red chillies(broken into halves) and raw peanuts to it.
Let them roast for a few minutes till the dal becomes brown.
Then add curry leaves.
After 15 seconds add, the coconut.
After stirring this mixture well for about two minutes, and making sure all of the grated coconut is not lumpy. (this is especially true if the grated coconut was from a frozen bag)
Add this mixture to rice, add salt and mix well.
You are all set to enjoy the not too overpowering taste of coconut, the chilies and the peanuts!
